Boom-boom, Tex-Mex, sour cream chicken or stacked avocado chicken. Rolled enchiladas are cut in half (yielding 24 pieces) stacked enchiladas are cut in squares (12-15 pieces).

Flour tortillas rolled tight and filled with grilled chicken fajitas, Jack cheese, green onions and green chiles, fried and then cut in halves - one dozen will give 24 pieces. Bella blanca on the side for dipping.

Corn tortillas rolled tight and filled with shredded new Mexican red chicken, Jack cheese and green chiles - fried crisp and them cut in halves - one dozen will give 24 pieces. Avocado cream sauce on the side for dipping.
