This month, Kolache Shoppe's savory special is the Kolache di Recco. First-time collaborator and longtime Kolache Shoppe fan, chef Felipe Riccio, was inspired by focaccia di recco, an Italian flatbread stuffed with cheese and a popular dish at one of his beloved restaurants, Rosie Cannonball. To transform the bread into a kolache, he’s combined diced mortadella and crescenza, a mild, creamy cow’s milk cheese, and rolled them into Kolache Shoppe’s signature traditional dough. After baking, the pastries are brushed with honey butter and finished with flaky Maldon salt.
