Brisket seasoned with salt & black pepper and smoked for 14+ hours over real Texas post oak wood. Please specify lean, moist or mixed.

Sausage Slammer (ea.)
Our house-made pork sausage stuffed with a cheddar-filled jalapeño half and then wrapped in bacon. Smoked low and slow.
Pork Steak
Cut from the Boston Butt, this is a local favorite and part of the Central Texas experience. In Texas, we just prefer steaks.
Pork Ribs
Tender with just enough resistance. A full, smoked rack averages 3 ½ lbs. Each full rack will have approximately 11 - 12 ribs.

Known as the most tender in the rib family, a full, smoked rack averages 2 ¼ lbs. Each rack will have approximately 11 – 12 ribs.
Half Chicken (ea.)
All natural chicken breast, wing, leg, and thigh with a smoky flavor, golden color, and visible grill marks from the pit. Weighing about 1 ¼ lbs. per half.
Turkey
All-natural Grade A boneless turkey breast. Moist, succulent, and sliced to order.
