Tampiqueña Traditional Entrée
Marinated fajita and one cheese enchilada topped with choice of queso, salsa or gravy and served with pico de gallo, guacamole and choice of homemade tortillas.
Enchiladas (3) Traditional Entrée
Three enchiladas with choice of fillings, topped with your choice of queso, salsa or gravy. Served with a cheese puff.
Shrimp Enchiladas (3) Traditional Entrée
Three cheese and shrimp enchiladas topped with homemade salsa del mar and two jumbo grilled shrimp. Served with a garnish of pico de gallo.
Enchiladas al Carbón (2) Traditional Entrée
Two enchiladas with choice of fillings, topped with choice of queso, salsa, or gravy. Garnish of sour cream.
Cowboy Special Traditional Entrée
Two enchiladas (cheese, pulled pork, ground beef, or shredded chicken) topped with choice of queso, salsa or gravy. Served with a cheese puff and a ground beef crispy taco, with choice of fillings.
Las Flautas (3) Traditional Entrée
Three flautas with choice of fillings rolled in flour tortillas. Served with a cheese puff, guacamole and sour cream.
Chile Relleno Traditional Entrée
Poblano pepper stuffed with pulled pork, ground beef, or shredded chicken, battered and fried then topped with choice of queso, salsa, or gravy. Served with tortillas.
Tostadas (2) Traditional Entrée
Two crispy corn tortillas served with pulled pork, ground beef, or shredded chicken. Topped with shredded lettuce, tomato, sour cream, American cheese and guacamole. Tostadas are not served with any sides.
Homemade Tamales (3) Traditional Entrée
Three pulled pork tamales, topped with choice of queso, salsa or gravy. Served with a cheese puff.
Las Tortugas Traditional Entrée
A halved avocado breaded and deep-fried to a light golden brown, served atop of a bed of Monterey jack cheese and fajita beef, chicken or combo. Then garnished with a mixture of American and Monterey jack cheese and served with a cheese puff. Only served with rice.
Tex Mex Burrito Traditional Entrée
Large flour tortilla filled with pulled pork, ground beef, or shredded chicken. Topped with queso, salsa, or gravy. Served with a cheese puff with choice of filling.
El Grande Burrito Traditional Entrée
Big burrito with choice of filling, beans, rice, sour cream, and shredded lettuce. Topped with choice of queso, salsa, or gravy. Does not come with sides.
Las Comadres Traditional Entrée
Two homemade pulled pork tamales and two enchiladas (cheese, pulled pork, ground beef, or shredded chicken) topped with choice of queso, salsa or gravy. With choice of filling.
Chimichanga Traditional Entrée
Large deep-fried flour tortilla stuffed with pulled pork, ground beef, or shredded chicken. Served with a cheese puff, sour cream and guacamole. With choice of filling.
Pollo con Bacon Traditional Entrée
Grilled chicken breast topped with bacon, Monterey jack cheese and red salsa, green salsa or salsa mar. With a garnish of guacamole and tortillas of choice.

Coyote Special Traditional Entrée
One fajita chicken taco al carbón, one ground beef and bean chalupa and one ground beef crispy taco. Served with garnish of guacamole. Only comes with rice.
Cold Plate Traditional Entrée
Ground beef crispy taco, ground beef tostada, Chile con queso tostada, guacamole and a scoop of sour cream. Not served with sides.
